APPLESAUCE CAKE


This cake is really just so easy so moist, so autumn, and so delicious. You won't be mad at me if you eat it warm out of the oven with a large dollop of fresh whip cream. Recipe originally from An Apple Art and Recipe Book

Ingredients:
1/2 cup butter or margarine 
2 cups sugar
1 large egg
1 1/2 cups fresh, unsweetened applesauce
2 teaspoons baking soda, dissolved in 1/2 cup boiling water
2 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
*optional* 1 cup raisins 
*optional* 1/2 cup cup walnuts

Preheat oven to 350 degrees. Cream butter and sugar together. Add in egg and beat until smooth. In another bowl, mix together applesauce and baking soda water. In a third bowl, (a lot of bowls… worth it… trust me) sift together spices and flour. Alternately add the flour mixture and applesauce mixture to the butter mixture. Blending well after each time. Stir in raisins and nuts. Pour into a greased and floured pan, preferably a bundt pan, cause it's just so much prettier that way. Bake at 350 degrees for 1 hour to 1 hour and 20 minutes, dependent on your oven.
